Preheat the oven to 200C/gas mark 6. Put 4 pores and skin-on, bone-in hen thighs (about 500g) in a roasting tin, drizzle with a minimal olive oil, period with salt, pepper and 1-2 tsp of chopped thyme leaves and then roast for about 30 minutes, until eventually the skin is golden. Clear away from the oven and allow to amazing.
Make the herb mayonnaise. Slash 150g of asparagus into limited lengths, then prepare dinner in deep boiling drinking water for about 7 minutes, or until finally tender, then drain and established apart. Only the generous can make a sandwich really worth feeding on. The hen is most effective at space temperature relatively than chilly from the fridge. I like to put any salad leaves or radishes into a deep bowl of iced water for 20 minutes to crisp them up beforehand.
You can use chopped refreshing chilli or 1 tsp or far more of chilli paste in put of the wasabi or a make a curried mayonnaise by including a spoonful of curry paste. If I do that, then I also consist of some sliced peach or mango, far too.
